Should I use sitemaps in Webmaster Tools (Search Console) even though I only have a handful pages on my website?

The simple answer is yes and the reason is so that you can see how well your pages are being indexed.

You can see a historical graph of submitted and indexed pages, a great way to know if there are problems with spidering.
